Cucumber salmon sandwiches
If you need some new ideas for you school lunch, try these cucumber salmon sandwiches. This video will walk you through the process to make this tasty dish.
Ingredients:
Quick pickled red onions:
½ red onion, sliced
4 tablespoons salt
4 tablespoons sugar
Whole peppercorns
Bay leaf
Assembly:
1 package cream cheese
1 persian or seedless cucumber
1 everything bagel, sliced
Butter for frying
3 ounces cold smoked salmon lox
Salt and pepper for seasoning
- Mix package of cream cheese in a medium bowl, adding salt and cracked black pepper until seasoned to taste and smooth in texture.
- Place sliced red onion in a colander or mesh strainer. Pour 1 cup boiling water overtop, allow to drain fully, discard water.
- Mix sugar and salt with 1 cup lukewarm water, stir until fully dissolved and pour into a small bowl. Add bay leaf, peppercorns and blanched red onions.
- Toast bagel halves with butter in a skillet over medium heat until golden brown.
- Assemble the sandwich starting with a layer of whipped cream cheese on the bottom bagel half, topping with smoked salmon, pickled red onions and sliced cucumbers. Sprinkle with salt and pepper to season.
